Ali’s Lemon and Lavender Protein Balls

I came back from 10 days of glorious sunshine in Italy to a wet and cold UK summer! Burr… where did the beautiful weather I left behind go too. I even lit the wood burner on Monday evening it was so chilly! I also returned home to a lavender hedge which is nearly over but for a few fresh flowers. Not wanting my lavender to go to waste I’ve been cooking up  some treats in the form of these luscious Lemon and Lavender protein balls. They are super easy to make and absolutely delicious. And when I say cooking some treats up, I don’t actually mean cooking – they are raw, grain-free, gluten-free, dairy-free, egg-free, refined sugar free, and even paleo-friendly?

It's important you use a plant based protein as your body is far more able to absorb the nutrient content. I love the Arbonne protein as it is nutritious and perfectly balanced. Made using a combination of plant based protein it is Pea, Rice and Cranberry based with no refined sugar or artificial colours, flavours or sweetners. It's also packed with 23 vitamins and minerals - what's not to love about that.    

But what I really love is that they are super delicious.

Ingredients
Makes about 20 balls

1 cup raw cashews

1 cup Arbonne Vanilla Protein Powder

2 tablespoons linseeds

1 tablespoon fresh lavender flowers taken off the stems

½ cup honey. To make them less sweet use ¼ cup honey and ¼ cup melted coconut oil to bind them mix together.

Grated zest of 1 organic lemon

Lavender blooms to garnish


Directions

In a food processor blitz the cashews and linseeds until you have a fine meal.

Add the lavender, Arbonne protein powder and lemon rind and blitz again

Add the honey and blitz until a ball forms.
Scoop one dessertspoon of the mixture and roll it into a ball.
Repeat to make 20 small balls. Top with a lavender flower.

Place balls onto a lined baking sheet and transfer to the refrigerator for at least 30 minutes to firm up.

Keep stored in the refrigerator. They will keep for 1 – 2 weeks (but not in our house – we eat them far quicker than this as they are so delicious!)
